I was in Olivier's class, awesome class. I did try the creams but most of my practice during the class was with my own cakes since that is the product I use. I admit the creams had some advantages and I left the class wanting my own set but I don't want to give up my cakes because they have their own advantages too. Maybe if I ever make a fortune in this industry...I'll buy a set of every brand out there and roll around in them....a very happy colorful camper. But until then, I am trying to get my cakes to blend as beautifully as the creams did!
But even though I do not use the creams the class was excellent - I learned a different way to sponge, a different way to do line work and a different way to look at my designs and improve on them. It gave me a whole new perspective.
