Search for volume in FM Help. The topic "Including Volume and Chapter
numbers..." has the details.
Briefly:
You need to set a value for the Volume Number system variable.
* In the book window, select all the chapters
* Use Format > Document > Numbering > Chapter.
* Format it as text; type the title text.
* Define the Running H/F in all files as the Volume Number variable.
