Try File > Print Book and specify the Acrobat logical printer as the
output device rather than SaveAs.
(On the FM print dialog box, make sure you have Generate Acrobat Data
ON, but Print to File OFF.)

Specify the page size as 11x17. For electronic viewing, Acrobat should
adjust the pages automagically so each page size fills the window.
