I'm guessing the headings that didn't change had character
overrides. If you're happy to remove all overrides from the whole
document, you can do the import again and select the Remove all
overrides checkbox. If not, you can search the document for
overrides and remove them when you find them in headings.
Another thought: in the document you imported from, could some of
the heading styles there be overridden? You might think you're
importing from a clean file but not actually be.

a different document that was correct. But the font family for
several headings did not change in the recipient document as it
should have.
What went wrong and how can I get the correct font to apply
document-wide (other than manually changing + "update all")? I'd
rather not have to find every affected style and change each first
instance manually.
