As I recall, it works the same way as a Hypertext link to a URL basically - so 
use that option and provide the exact text you show below

The computer's OS should interpret that as a request to fire up the default 
e-mail client.

None of the command options under "Variable, Hypertext" look reasonable.

I think I want

but what goes in front of it?
