I also endorse EZVars ... its ability to allow me search for and convert existing text to a variable throughout a document makes it great! It is my second most used FM add-on ... just after BookVars to manage all the variables in the first place. :)

Lief provided the shortcut (Ctrl+0), but I'll second Huntley's recommendation of EZVars, which gives you a modeless dialog for picking vars (like the pgf and char catalogs) and other nifty features like converting existing instances of WeiRdCaPApp3 to a variable.
