Actually, no matter which, it sounds as if something in your install is whacked... by default, if you use File > Print and specify the Acrobat printer, Distiller should produce the PDF directly, without user intervention. I'd hesitate to recommend uninstalling and reinstalling though, because it IS working.... As for the default paper setting, if you have Acrobat, you can open Distiller and modify the job options. And you should also be able to go in through the Printer Control Panel and select the printer and then Properties to twiddle things, including the default paper size.
