Windows 7 is the most stable OS I've used in years. I almost never need to reboot except when an installer requires it.
Unfortunately Adobe uses a homebrew UI framework (Adobe OS Widget Library aka OWL) that's buggy as hell. Occasionally it gets itself into a state where it needs the system to be rebooted before it will work right, but I don't think that's Windows' fault.
