I agree that it's a bad idea to show both of them in a video. The main advantages of Unstructured FrameMaker (as I see it) are stability and single-sourcing. You could show a video about conditional text and sharing chapters in books. As far as stability, a list of the features that are more stable in FrameMaker should do. You could add a slide or two to the video for that.
