There is indeed a quite spectacular cat fight in 'Coffy', where Pam Grier puts razor blades into her Afro hair and provokes a girl. The rest you can probably imagine.

I'd suggest looking at Pam Grier's 1970s films like Big Bird Cage (one of the many "women in prison" exploitation genre films you might want to explore via IMDB) or >Coffy & Foxy Brown, although I think those two films might feature more of her fighting men.
