Kevin, I would recommend "The Darkroom Cookbook" by Steve Anchell. It's thorough in it's explanation of the chemical interactions at each step in the process, and goes so far as to explain how each component of a developer aids in making a quick, efficient, reliable chemical process.
Also see "Photographic Chemistry in Black and White and Colour Photography" by George T. Eaton. It's a classic, but look for the 1986 edition.
