Dear Matt, You might want to also ask the Art House Convergence listserv <http://www.arthouseconvergence.org/resources/> since almost everybody on that list has either converted or about to. There's also a lot of the companies that do the conversions (Boston Light and Sound, Cardinal) on the listserv willing to give free advice.
You also should definitely talk to the lovely folks at NYSCA's Electronic Media and Film department. New York State's Regional Economic Development office and NYSCA with their "Digital Film Projector Conversion Program" have been leading the way to helping theaters and non-profits convert to digital. There's a brief outline of it here <http://regionalcouncils.ny.gov/assets/documents/workshops/CouncilontheArts2013.pdf> in their PDF. I think it's the only program like it in the country. I was on the original advisory panel for it and I have seen it's been very successful.
