Bruschetta Salad

Prep Time: 20 minutes

Serves: 6
1/2 cup olive oil 
2 tbsp. red wine vinegar 
4 medium vine-ripened tomatoes, cut into 1" pieces (about 2 cups)
1/2 cup thinly sliced cucumber 
1/2 cup thinly sliced red onion 
10 large fresh basil leaves, chopped (about 1/4 cup)
1 tbsp. drained capers 
2 cups Pepperidge FarmĀ® Whole Grain Caesar Croutons 
MIX oil and vinegar in large bowl. Add tomatoes, cucumbers, red onion, basil 
and capers. Toss until evenly coated. Season to taste. 
ADD croutons just before serving. Toss until evenly coated. Serve immediately.
