Potato Ham Salad

Potato cubes, ham and green onion are tossed in a vinaigrette dressing and then 
topped with Parmesan cheese. 


Ingredients
4 large boiling potatoes
1 can (10 oz.) condesned consomme
1 clove garlic, whole
1 cup diced ham
1/4 cup sliced green onion
1/2 cup freshly grated Parmesan cheese
1/4 cup chopped fresh parsley

Directions
1. Pare the potatoes and quarter. Cook in consomme with the garlic until just 
tender. Drain, reserving broth for soup or gravy.

2. Dice potatoes. Add ham and green onion.

3. Combine dressing ingredients (below). Drizzle over potatoes, tossing gently. 
Sprinkle with cheese and parsley

DRESSING:

3 Tbs. white wine vinegar
2 Tbs. olive oil
1/2 tsp. Dijon-style mustard
1/4 tsp. salt, optional

Comments
Good served with Whole wheat rolls and chilled white wine.
