Ice Cream Sandwiches

Makes about 13 cookie sandwiches


1 cup butter or margarine, softened
2/3 cup granulated sugar
2 teaspoons baking powder
1/4 teaspoon salt
2 eggs
1/3 cup honey
1 1/2 cups all-purpose flour
3/4 cup rolled oats
1/2 cup semisweet chocolate pieces and/or raisins and/or snipped dried fruit
1 quart vanilla, chocolate, rum raisin, chocolate chip or your choice of ice 


In a mixing bowl beat the butter or margarine with an electric mixer on medium 
to high speed for 30 seconds. Add the sugar, baking powder, and salt; beat till 
combined. Beat in the eggs and honey. Beat in as much of the flour as you can 
with the mixer. Stir in any remaining flour with a wooden spoon. Stir in the 
oats and chocolate, and/or raisins, and/or dried fruit.

Drop dough by rounded tablespoons 3 inches apart onto ungreased cookie sheets. 
Bake in a preheated 375 degree F oven for 12 to 15 minutes, or till golden 
brown. Let cool on cookie sheets for 1 minute. Remove cookies and cool on wire 

Pack ice cream into a 1/3-cup measure and unmold it onto the flat side of a 
cookie. Top with a second cookie, flat-side down. Press cookies together to 
secure. Wrap each sandwich in plastic wrap; freeze for about 1 hour, or till 
ice cream is solid.
