Mushroom Beef Saté

Yield:  2 servings
RECIPE INGREDIENTS

8 to 10 ounces boneless strip steak (about 1 1/4 inch thick) cut in 1 /12 inch 
chunks
8 ounces whole medium-sized fresh white mushrooms
1 1/2 cups zucchini and/or yellow summer squash cut in 1-inch chunks
Olive oil
1/3 cup smooth peanut butter
2 tablespoons soy sauce
1 tablespoon rice wine vinegar
1/2 teaspoon ground cumin
1/8 to 1/4 teaspoon ground red pepper
DIRECTIONS

Preheat broiler. On 4 (12-inch) skewers alternately thread steak, mushrooms and 
squash. Place skewers on a rack of a broiler pan; lightly brush with oil. 
Season with salt and black pepper, if desired. Broil 4 to 5 inches from heat 
until meat is medium-rare, about 10 minutes, turning and brushing occasionally 
with oil.


Meanwhile, in a small bowl combine peanut butter, 1/4 cup water, the soy sauce, 
vinegar, cumin and red pepper; serve with skewers. Garnish skewers with cherry 
tomatoes, if desired.
