Caramel Cheesecake

Crust:
1 1/4 cup graham cracker crumbs
3 tbsp brown sugar
1/3 cup melted butter 

Filling:
1 1/2 lbs cream cheese
14 oz can of condensed milk
4 eggs
2 tsp vanilla
1 tbsp lemon juice
20 caramels, minced

Topping:
1 1/2 cups sour cream
1/2 tsp vanilla
1 tbsp sugar

Crust:
Find a 9” or 10” spring form pan and add ingredients, pressing into the bottom 
once the mixture becomes thicker. 

Filling:
First mix the cream cheese and milk until its smooth. Add eggs one at a time 
then add lemon juice and vanilla. Finally fold in the minced caramels. Pour the 
filling on top of the crust and bake at 350 degrees or until the cake sets. 

Topping:
Mix ingredients in large bowl then put on top of filling and continue baking 
for 10 minutes. Let the cheesecake cool inside the oven with door open for one 
hour and chill until you're ready to serve. Add whipped cream for topping if 
desired.
