Down South Cheese Grits

from Peggy Thies of the Isis Shrine Cookbook in
Salina, KS

4 c. boiling water
1 tsp salt
1 c instant grits
1 stick margarine
1 roll cheese, jalapeno
2 eggs
milk

Bring salted water to rolling boil and slowly stir in grits. Cook 3 minutes, 
stirring constantly. Remove from heat and stir in margarine and cheese. Put 
eggs in a measuring cup and add milk to make 1 cup. Beat well and add to grit 
mixture. Bake in greased 2-quart casserole at 300 degrees for 1 hour.
