BREAKFAST CASSEROLES:

CHILI RELLENO CASSEROLE
1 lb cheddar cheese grated 1 small can evaporated milk 
1 lb monterey jack cheese grated 4 eggs, separated
4 cans diced, green chilies 1 TB flour
1 tsp black pepper 

Put cheese in a large bowl. Add chilies and mix well. Press cheese and chillies 
into greased 9X13 casserole dish. Beat egg yolks, milk, flour and pepper 
together in medium bowl. Set aside. Whip egg whites, and fold in egg mixture. 
Pour over mixture in casserole dish, stab with fork so egg mixture will seep 
through. Bake at 325 for 25-30 minutes or until golden brown.
