OK, that worked fine. Essentially:

svn cp svn://svn.freebsd.org/ports/head/www/waterfox@480899 
/usr/ports/www/waterfox

Vulnerabilities noted (at configure time) and understood.

Prior to that, I experimented briefly with waterfox@480899 copied to
/usr/local/poudriere/ports/default/www/waterfox
… wondering whether poudriere might be 'forced' to work with the deleted port. 
I guess not :-)
