I admit, fixing bootloader config is no much harder. One can choose "3. Escape to loader prompt" from boot menu, then type:

unload
set/unset <your problematic variable from loader.conf>
boot /boot/kernel/kernel

Once booted, fix broken loader.conf and reboot. :-)

BTW, can we instruct loader on its prompt what config file to use for this boot ? I'm facing this issue quite often toying with different kernel modules, sometimes I want to be able to choose what config loader uses instead of default.
