Hi Daniel, Sorry for the delayed response; welcome to the list!
Since the introduction of pkgng, long compile times should no longer be a problem, even on slower computers. You can set up one machine as a build system, and install the packages on other computers. You can even try out the official package repositories. That said, building from source still has many advantages. I'm excited that you'll be introducing FreeBSD in the classroom!
