for cases when I actually needed different OPTIONs when building for different
version of PYTHON.

OK, that definitely helps with my use case. It still seems like
DEFAULT_VERSIONS and PYTHON_VERSION aren't behaving as expected though. There's
probably still something I don't understand about how they are intended to work
together with FLAVORS.
