If you only have FreeBSD installed on the box or if you don't need slices/partitions you can just do newfs /dev/xxx (dedicate).
vinum should not be used on 6.x and above, gvinum (GEOM + vinum) replaced it but I'm not sure if it's still actively supported/developped .. (?) Also, take a look at gconcat and unionfs.
