7.0 is perfectly stable and is recommended for production use. It's not bleeding edge code. That's 8.0-CURRENT which is NOT for production use. Unless you have a particular reason for using 6.x I would go with 7.0 It's fully tested.
nothing is ever fully tested ;) but yes, 7.0 can be classified stable. i would recommend 7.1-BETA install as some bugs are fixed there
