Thanks Steve,

So USB2 from a PC should work, which is good. I had problems booting FreeBSD 7.1 from even the internal drive on the mac mini until I partitioned it with MBR (as opposed to GUID).. I tried installing to a USB drive last night, but it doesn't seem to show up when I hold down option while booting (that normally shows all bootable drives). I was hoping if anyone has done this for some pointers.

I don't know about the Mac Mini part, but I certainly boot FreeBSD 7.1
from USB2 drive:
