Look at the make file. Some will bring up a ncurses menu for selection, others will display various options to set, and then some you can look at the make file to see what options it has. I would suggest looking at multimedia/mplayer as a good example of all three. BTW becuase this is a actual ports system you don't have to deal with things getting damaged by manually installing stuff like that.
