Last question. I also noticed that iSCSI targets are supported.
I might have missed it, but is there a link to documentation somewhere?
(Does one simply use the "default" portal for iSCSI? or how are portals
specified.)

Targets are indirectly supported in that you have to create a block device on the host using the FreeBSD iscsi initiator, and then point bhyve at that block device (see the handbook section, https://www.freebsd.org/doc/handbook/network-iscsi.html).
