Many thanks to Bret Johnson for sending me a copy of his Keys2joy
program that emulates a joystick via the keyboard. I was able to load
that on real hardware (Pocket386) and DOSDEF runs fine. I did the
joystick calibration and played a bit of the game before losing
spectacularly. :-)

To compare: on the same Pocket386 laptop, without using Keys2joy,
DOSDEF won't start and complains it doesn't have a joystick:
