My guess is that some programs really need the real thing, and slight
deviations make those programs either misbehave, not run correctly, or
not run at all.
For the majority of programs there is probably no difference if they run
on a 8088, a 8086 *or* a V20/V30.
As for 286 programs running on a V20, it's probably just the same: some
will run just fine, others won't. Especially DPMI is definitely not
compatible, it needs the 286s' Protected Mode. I assume the same is true
for the High Memory Area. Therefore, many programs relying on the real
80286 won't run on a V20, because of the missing Protected Mode. Alas,
Windows 3.0 won't run in Standard Mode (it needs the Protected Mode to
do that), nor will DESQview and QEMM-286 (to name a few). As won't OS/2 1.x.
I'm not at all sure if the 286-version of AutoCAD for DOS will run on a
V20, but the 8088/8086-version will run.
The Norton Utilities 8.0 are optimized for the Intel 80286 and not all
utilities will not run on a NEC V20 per-se, but can be patched:
