The best guide that I have found for configuring MySQL is:

However due to the flexibility that FreeRADIUS provides it is possible
to alter the tables from the provided schema. As a result you will want
to check out the sql.conf or whichever file the SQL queries are stored
in for communicating to the database.

For getting more familiar with FreeRADIUS I recommend setting up a test
box so that you can feel free to experiment and break things w/out
worry.
