You may see radius detail accounting logs in /var/log/radius/radacct/detail/x.x.x.x/, if you enable detail accounting. You may turn SQL accounting on and see logs in your database. And to see who's online you may use just usual who command or radwho. And sending login/password to /var/log/messages is not the job of radius server. I saw you use mgetty and I bet you haven't had configured it correctly.
