I believe it has to do with how the language is constructed. Lua is built to be very lightweight.
Last time I checked, spidermonkey had some problems with delays on some very specific cases due to its inner workings, but I can't tell for sure. Will you share your ccxml/vxml integration? I believe that these 2 components are something that lots of ppl could use.
