Hi Matt, FreeSWITCH probably isn't what you want. A quick Google for 'sip call sniffer' found this: http://www.enderunix.org/voipong/ which might well be a more appropriate starting point.
A SPAN port is just a port on a network switch which has the traffic going to/from another port (or ports) replicated to it.
