In windows there are widescreen modes on the NVidia cards, using one of these in conjunction with TV out and a widescreen TV should correct your aspect ratio (doesn't look too good on a monitor but if you are running it dedicated#. I guess it is just a case of recreating one of these resolution settings in your x configs. I don't know about FB.
I was using a Dxr3 which has hardware support for 16:9 and 4:3 so it was just a mode setting.
