Others here may have more informative replies, but I think almost any 
recent video card with dvi output would be good, so long as it is 
supported in linux.  You might look at the cards supported by mplayer's 
vidix or xfree86's xv extension.

I know ATI's radeon line works using the open-source xfree86 drivers 
(ati or radeon for your purposes, vesa driver if you were planning to 
use a tv, which you aren't - and I would steer clear of their 
proprietary drivers).  I had a bit of trouble with vidix on a radeon 
x700, but it is only a matter of time before it works properly (almost 
works now - odd green colors in the lighest pixels in the videos I 
tried), and xv works now afaik - those two use similar amounts of cpu in 
my experience, both low.  Also, I can say mplayer's vidix works 
beautifully on both a radeon 7500 and a radeon 9700 pro.

I also have experience using an NVidia GeForce 6800 and can say NVidia's 
proprietary xfree86 drivers work great.  I haven't had stability issues 
with them like I did with the ATI drivers, and xv works.  I'm unsure if 
vidix works with those, but as mentioned, xv will do and uses comparable 
cpu.

I have a little experience with a matrox, but only in the limited 
scenario of a dedicated tv box, and only for about a week so far!  I 
think matrox cards are well-supported by xfree86, and I know they're a 
favorite with mplayer developers, so a matrox card that has DVI would 
likely work well.

If it has a DVI output and is decently supported by your player of 
choice (mplayer in my case) or your video-hardware-interface-layer 
(xfree86 or directfb), you should be fine.
