I know what you mean... I went from HPUX to  Solaris 2.7 to Redhat 7.0...   I will say there are things I Like about them all.  I've found Rhat7 to be reasonably stable.  Running freeX can be flaky at times though on Rhat. 
 
I'm currently running rhat6.2 and freevsd1.4.10 ( I bought the 2 cd set from idaya due to time constraints ).  Runs fine.  The 2 cd set comes as a stripped down OS.  Things like Ping and Traceroute aren't installed by default.
 
All I can suggest is grab an old box and take a night to play around with redhat.
