Why the Guinness bubbles fall:

"Clive Fletcher and his students at the University of New South Wales in
Sydney found that most bubbles in a pint of the creamy stout do indeed
rise, as bubbles should.

But the liquid carrying these bubbles has nowhere to go once it reaches
the top, so it flows back down the sides of the glass, taking smaller
bubbles with it. Bubbles larger than 0.05 mm are able to resist."

Doesn't explain why it doesn't happen to lager...
