O'Reilly is constantly surprising me.  Their most recent stunt is the O'Reilly 
School of Technology.  The courses are "Certificate" level credit courses.  
They have a good set as of this reading:
        Web Programming
        Linux/Unix Sys Admin
        Data Base
        Java Programming
        PHP/SQL
Apparently you do not have to go for a particular cert.  The classes can be 
taken individually, along with some not in the cert program.

You can try the course for 7 days and drop it if it doesn't work for you.  It 
apparently is certified through the University of Illinois' Office of 
Continuing Education program. Alas, it does not seem cheap.
