You can manipulate that variable with a list function like

ListGetAt("#cgi.auth_user#", 2, "/")

I would think.  That will get you that particular piece that you are looking
for.

so you could do:

<cfset theUser = ListGetAt("#cgi.auth_user#", 2, "/")>

If you have anonymous access turned off on your share in IIS, you can get
the cgi.auth_user variable with CF.

I need to get the users login from the IIS server.  I can currently use an
