there's still an issue on github project about that subject, see 
https://github.com/fusioninventory/fusioninventory-agent/issues/883

In that issue, I explained the 6th may to use directly glpi-agent which can be 
used to replace fusioninventory-agent as it is fully compatible with 
fusioninventory-for-glpi plugin. There's a link for an early version but since 
then you can better directly download glpi-agent latest development versions on 
https://nightly.glpi-project.org/glpi-agent and there's the latest build for 
MacOS Big Sur which is in the "MacOSX - Apple Silicon" section as "arm64" arch 
build.

On any issue related to GLPI Agent, you can first read back the 
fusioninventory-agent issue I linked or you can open an issue on 
https://github.com/glpi-project/glpi-agent
