You won't. If you variable is going to be within a paragraph, you
probably out to have the entire paragraph as your variable, and
inserting the fields into that body of text. The paragraph will expand
and contract proportionately to the data.. Your decisions are if you
need to allow for movement below it, how you're going to handle line
breaks, etc.
"my client loves InDesign"... well, their probably going to hate the
fact that all of the cool kerning and letterspacing that they applied
are going into the toilet.
Best advice - try it... tell yourself - "if WORD can do it, I can"...
