Greg, I just found the same issue earlier this week. My problem was that on certain workstations (with a specific version of Helvetica installed), FusionPro would install that Helvetica file, but name it Arial in the FusionPro\Fonts\Arial.otf file.
On my machines, the offending font was "helv.ttf", a 53 kb Helvetica font from Adobe Systems. Once I uninstalled this font, and re-ran Load Fonts in FP, the regular version of Arial, as well as all other versions of Helvetica that I had installed (there are way too many Helvetica's out there), seem to work correctly. I would be interested to see how many others have this problem, or how specific it is. I haven't yet, but I could submit the offending font file to Printable, and let them test it.
