Okay - that's easy.
In the Manager, when you are setting up the labels, go to the UI Rules tab and
create a new rule using the template "Filter Values from Drop Down"
Then, choose the drop down field you want to remove colors from, and (holding
down your Ctrl key to select multiple colors) select the colors you do NOT want
to appear in the drop down.
You are not removing colors from the template, you are just preventing certain
colors from appearing in a drop down.
