Ah, further googling turned up what initial efforts didn't.
While I wasn't looking, a handful of megacorps borged the multitude of
pig farms. They run giant pig factories without any regard for
seasons (or anything else), supported by Fast-Edible-Product megacorps
that include bacon in their FEP. Volatility goes away because
something like 15 guys can (at least in principle) get together in one
room and plan the future of corn, pigs, bacon and waistlines for a
year or two ahead.
I was right: elephant in the room. I just wasn't looking.
