As luck would have i solved the problem about 20 minutes before you posted your reply. My confusion was i was trying to do this in the bootstrap. Which, for those like me who are still n00bs, isnt possible and will not work and will throw up the error i found. I think this is down to the article that was written, i followed what was said but the only step missing, which in my opinion was/is the most important step, is how do you actually add it to the application. Not once do i recall it saying "create a plugin and hey presto you're good to go" if it would have said that then i would have finished this in 20 minutes and not the 4-5 hours it took me. It was only down the video i posted above that helped me find the solution. Could you maybe suggest someone adds teh final step, creating the plugin. I like Zend and love what the potential could be but i'm finding the examples in the documentation expects a little to much previous knowledge.
