I've always just used apt-get from the commandline and synaptic in the GUI.
But if you like using aptitude, cool. Why don't you just search with
'aptitude search'? I gather that learning the options might be a bit
complicated, but it could be worth it.
As to removing everything, including config files, the docs say that
'purge' will do it, and since aptitude (and apt-get and synaptic) is
just an front end for dpkg, I would be surprised if it didn't. Do you
have some concrete cases where it failed to?
