I don't think it's forgetting your password. You've probably got the preferences set to check for new mail "every minute" or "every 5 minutes" and it's having problems connecting to your mail server. If your mail server is offline it won't accept your password, and the response of Mail.app is to ask you for your password, which is bothersome (almost a bug in my opinion). If your mail server is off- line you could type your password many times while waiting for it comes back online. When I get this message I'm too lazy to retype my password and instead I press "Cancel" which takes that mailbox "offline" within Mail.app and then use "take online command" which resends your stored password.
