if I recall correctly, this has been done on the first revision iBook.  In 
principle, if the higher density RAM chips are pin-compatible, this can be 
done, assuming that the memory controller can support it.  if I had to to 
guess, there are 2 RAM banks (I am on thin ice here....), and if one of them 
can take 512 MB, then you could remove the 128 MEG bank and replace with a set 
for 256/512.  I guess the first step is to see if Apple has the tech notes on 
the icebook to see if it gives details on memory controller and structure.
