As many people said: drag mounted disk to trash. Also, make sure you turn off File Sharing in the control strip or the control panel when you're not using it -- running it needlessly takes up CPU time & RAM. Finally, if an AppleShare server goes down unexpectedly just let the computer realise it's gone & time out (usually a minute or so).
